Le problème vient bien de la récupération de l’encodage système affecté à la variable salt_system_encoding. En précisant l’environnement linguistique pour la commande executée par php, cette variable contient la bonne valeur.
L’erreur est plus évidente lorsqu’on utilise l’option --out-file vu que la variable salt_system_encoding est systématiquement utilisée pour écrire le fichier.
