Ce serait bien que par défaut le menu grub apparaisse au moins 2 ou 5 secondes !
Si on est perfectionniste, ça pourrait être configurable dans gen_config ;)

mettre GRUB_HIDDEN_TIMEOUT_QUIET=false dans /etc/default/grub ?

Au final, je me demande l'utilité du sed sur GRUB_TIMEOUT dans regen_grub
